Instructions
In a cocktail shaker, muddle the fresh blackberries and thyme leaves until the blackberries are well crushed and fragrant.
Add the honey (or agave syrup) and lemon juice to the shaker, and muddle for an additional 30 seconds to mix the flavors.
Fill the shaker with ice cubes and pour in the sparkling water. Secure the lid and shake gently to combine without losing all the fizz.
Strain the mixture into a glass filled with ice, leaving behind the solids for a smooth drink.
Garnish with fresh thyme sprigs and a few whole blackberries for a pop of color.
