Instructions
Preheat your grill to medium-high heat or your oven to 400°F (200°C).
In a large mixing bowl, combine the chicken pieces, rice, diced bell pepper, corn, onion, and garlic.
Drizzle olive oil over the mixture, then sprinkle Cajun seasoning, smoked paprika, salt, and pepper. Toss everything together until well coated.
Lay out four large pieces of aluminum foil (about 12 inches long each).
Divide the chicken and rice mixture evenly among the four pieces of foil.
Carefully pour 1/2 cup of chicken broth over each portion on the foil.
Fold the foil packets over tightly, sealing them to create a pocket.
Place the packets on the grill or in the oven. Cook for about 25-30 minutes, or until the chicken is cooked through and the rice is tender.
Once cooked, remove the packets from heat and let them sit for a few minutes before carefully opening (the steam will be hot).
Serve the contents of the foil packs in bowls, garnished with fresh parsley.
