In a medium-sized bowl or jar, combine the rolled oats, almond milk, vanilla extract, maple syrup, cooled brewed coffee, chia seeds, and a pinch of salt. Stir well to combine all the ingredients.
Add in a tablespoon of the caramel sauce and stir to incorporate, leaving some swirls of caramel for a visually appealing effect.
Cover the bowl or jar with a lid or plastic wrap and refrigerate overnight (or for at least 4 hours) to allow the oats to absorb the liquid and soften.
In the morning, give the oats a good stir before serving. Adjust the consistency with a splash of milk if desired.
Top the overnight oats with whipped cream, if using, and drizzle additional caramel sauce on top for an extra sweet touch.
Serve immediately, either straight from the jar or in a bowl.
