Instructions
In a large mixing bowl, combine the grated carrots and grated apple.
Add the raisins and chopped walnuts to the bowl, mixing them into the grated mixture.
In a separate small bowl, whisk together the Greek yogurt, honey, apple cider vinegar, and Dijon mustard until smooth and well combined.
Pour the dressing over the carrot and apple mixture, and toss to ensure everything is well coated.
Season with salt and pepper to taste, adjusting flavors as needed.
Cover the slaw and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
Just before serving, give the slaw one last toss and garnish with chopped fresh parsley for an added pop of color.
