In a large skillet over medium heat, cook the ground beef. Season with garlic powder, onion powder, paprika, salt, and pepper, breaking it apart with a spatula until fully cooked. Drain excess grease and set aside.
In a small bowl, mix together mayonnaise, ketchup, and mustard to create a special sauce.
Heat the flour tortillas in a dry skillet or microwave for a few seconds just until warm and pliable.
Lay each tortilla flat and spread a spoonful of the special sauce in the center of each one.
Spoon some of the cooked ground beef onto the sauce, then layer with shredded cheddar cheese, lettuce, diced tomato, and pickles.
Carefully fold in the sides of the tortilla, then roll it up from the bottom, tightly encasing the filling.
Place the wrapped tortillas seam-side down in the skillet over medium heat. Cook each side for 2-3 minutes, or until golden brown and crispy.
Remove from skillet, let cool slightly, and cut in half to reveal the gooey cheese and colorful fillings.
