In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened, about 3-4 minutes.
Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Drain any excess grease, and then stir in the Worcestershire sauce, paprika, salt, and pepper. Mix well and remove from heat.
In a large mixing bowl, combine the uncooked rice and beef broth. Stir in the frozen mixed vegetables and the cooked beef mixture. Mix until fully combined.
Pour the mixture into a greased 9x13 inch baking dish. Cover the dish with aluminum foil.
Bake in the preheated oven for 30 minutes, then remove the foil and sprinkle the shredded cheddar cheese evenly on top.
Return to the oven, uncovered, and bake for an additional 10-15 minutes or until the cheese is bubbly and slightly golden.
Once done, remove from the oven and let it sit for a few minutes before serving.
Notes
Garnish with fresh parsley before serving for a pop of color and added freshness. Serve with a side salad for a complete meal.
