4 tablespoons chili oil (store-bought or homemade)

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 inch ginger, grated

1 red bell pepper, sliced thinly

1 cup bok choy, chopped

2 green onions, chopped

1 teaspoon toasted sesame seeds (for garnish)

Instructions
 

Begin by cooking the udon noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

    In a large skillet or wok, heat the chili oil over medium heat.

      Add the minced garlic and grated ginger to the skillet, sautéing for about 30 seconds until fragrant.

        Toss in the sliced red bell pepper and chopped bok choy, stir-frying for 4-5 minutes until the vegetables are slightly tender but still vibrant in color.

          Add the cooked udon noodles to the skillet, followed by the soy sauce and sesame oil. Gently toss everything together, ensuring the noodles are evenly coated in the spicy oil and sauce.
