Instructions
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
In another bowl, mix the buttermilk, egg, and mashed bananas until smooth.
Gradually add the wet ingredients into the dry ingredients, stirring gently until just combined; do not overmix. Fold in the chocolate chips.
Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
Pour about 1/4 cup of pancake batter onto the skillet for each pancake, allowing space between them. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
Remove pancakes from the skillet and let cool slightly.
Once cool, stack two pancakes with a slice of banana in between on each skewer, alternating with mini chocolate chips if desired.
Drizzle with maple syrup before serving, and garnish with fresh berries for a vibrant and colorful plate.
