Instructions
Preheat your oven to 325°F (165°C). Line a baking sheet with parchment paper to prevent sticking.
In a large mixing bowl, combine rolled oats, shredded coconut, chopped almonds, sea salt, and cinnamon. Stir until well mixed.
In a separate bowl, whisk together the almond butter, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth and fully combined.
Pour the wet mixture over the dry ingredients. Stir until all the dry ingredients are well-coated in the wet mixture. If using, fold in the dried cranberries or your chosen dried fruit at this stage.
Using your hands, squeeze small handfuls of the mixture together to form clusters. Place them on the prepared baking sheet, leaving some space between each cluster.
Bake in the preheated oven for 20-25 minutes or until golden brown, stirring halfway through for even baking.
Once baked, remove from the oven and allow the granola clusters to cool completely on the baking sheet. They will harden as they cool.
Once completely cooled, break up any large clusters if desired and store in an airtight container at room temperature for up to two weeks.
