In a food processor, combine the pitted dates, shredded coconut, almond butter, almond flour, vanilla extract, and a pinch of salt. Pulse until the mixture is well combined and sticky.
Add the dark chocolate chips and chopped almonds to the mixture. Pulse a few more times until evenly distributed.
Scoop out tablespoon-sized portions of the mixture and roll them into balls using your hands. Repeat until all the mixture is formed into energy bites.
Place the energy bites on a baking sheet lined with parchment paper.
For a firmer texture, refrigerate the bites for at least 30 minutes before serving.
