Instructions
 

In a medium saucepan, whisk together the granulated sugar, cornstarch, and salt.

    Gradually whisk in the coconut milk and heavy whipping cream until smooth.

      Cook over medium heat, stirring constantly until the mixture thickens and starts to bubble, about 5-7 minutes.

        In a separate bowl, lightly beat the egg yolks. Slowly add a small amount of the hot coconut mixture to the yolks, whisking constantly to temper them.
