12 oz linguine

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup unsalted butter

4 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup chicken broth

1 cup heavy cream

1 cup cherry tomatoes, halved

3 green onions, sliced for garnish

Fresh parsley, chopped for garnish

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Prepare the Chicken: In a large skillet over medium-high heat, melt 1/4 cup of the butter. Once melted and bubbling, add the chicken pieces, smoked paprika, cayenne pepper, onion powder, salt, and black pepper. Sauté for about 6-8 minutes or until the chicken is golden brown and fully cooked. Remove the chicken from the skillet and set aside.

      Make the Cowboy Butter Sauce: In the same skillet, add the remaining 1/4 cup of butter. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant. Stir in the chicken broth and bring to a simmer.

        Add the Cream: Lower the heat and add the heavy cream, stirring continuously until the sauce thickens slightly (about 3-4 minutes). If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

          Combine Everything: Add the cherry tomatoes and cooked chicken back to the sauce. Stir to combine, allowing the tomatoes to soften slightly. Gently fold in the cooked linguine, tossing everything together until the pasta is well coated in the saucy goodness.

            Serve and Garnish: Remove from heat and plate the linguine. Garnish with sliced green onions and chopped parsley.
