Ingredients

8 oz (225g) penne pasta

1 lb (450g) ground beef

1 onion, chopped

3 cloves garlic, minced

1 bell pepper (any color), diced

1 cup corn kernels (fresh or frozen)

1 can (15 oz) diced tomatoes, drained

2 tablespoons chili powder

1 teaspoon cumin

1 tablespoon smoked paprika

Salt and pepper to taste

1 cup shredded cheddar cheese

Fresh cilantro, for garnish

2 tablespoons olive oil

Instructions

Boil the Pasta: In a large pot, bring salted water to a boil and add the penne pasta. Cook according to package instructions until al dente, then drain and set aside.

Cook the Beef: In a large skillet, heat the olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks (about 6-7 minutes).

Add the Vegetables: Add chopped onion, garlic, and bell pepper to the skillet with the beef. Sauté for about 5 minutes until the vegetables are tender.

Flavor It Up: Stir in the corn, diced tomatoes, chili powder, cumin, smoked paprika, salt, and pepper. Mix well and let the mixture simmer for an additional 5 minutes, allowing the flavors to meld together.

Combine: Add the cooked penne pasta to the skillet and stir everything together, ensuring the pasta is well-coated with the beef and vegetable mixture.

Cheesy Goodness: Sprinkle the shredded cheddar cheese over the top and cover the skillet with a lid for 2-3 minutes, allowing the cheese to melt.

Serve: Once the cheese has melted, remove from heat, garnish with fresh cilantro, and serve hot.

                Prep Time: 15 min | Total Time: 35 min | Servings: 4

                  - Presentation Tips: Serve the Cowboy Pasta in rustic bowls, topped with additional cheese and a sprinkle of cilantro for a vibrant touch. Pair with cornbread or a side of pickled jalapeños for an extra kick!
