Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, whisk together flour, sugar, baking powder, and salt until well combined.
Add the cold, cubed butter to the flour mixture, using a pastry cutter or your fingers to work it in until the mixture resembles coarse crumbs.
Stir in the dried cranberries and orange zest until evenly distributed throughout the flour mixture.
In a separate bowl, mix together buttermilk, egg, and vanilla extract.
Pour the wet ingredients into the dry ingredients and stir gently until just combined; be careful not to overmix.
Turn the dough out onto a floured surface and gently pat it into a circle about 1-inch thick.
Cut the dough into 8 wedges and transfer them to the prepared baking sheet, leaving room between each scone.
Sprinkle the tops of the scones with the additional sugar for a delightful crunch.
Bake for 15-20 minutes or until the scones are golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and allow to cool slightly on a wire rack before serving warm.
