Instructions
In a large pot over medium heat, add the olive oil and sauté the chopped onion until it becomes translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Pour in the crushed tomatoes and vegetable broth; add in the sugar and dried oregano. Stir to combine.
Bring the mixture to a simmer, then reduce heat and let it cook uncovered for 15-20 minutes, allowing the flavors to meld.
Using an immersion blender, carefully blend the soup until smooth (you can also transfer it in batches to a regular blender if needed).
Stir in the heavy cream and fresh basil. Cook for another 5 minutes until the soup is heated through.
Season with salt and pepper to taste, adjusting as necessary.
Serve hot, garnished with croutons or additional fresh basil leaves.
Notes
For a vegan version, substitute heavy cream with coconut cream.
