Instructions
Preheat your air fryer to 375°F (190°C) for about 5 minutes.
In a bowl, combine the Panko breadcrumbs and shredded coconut; mix until well blended.
In another bowl, beat the eggs, adding lime juice, garlic powder, paprika, salt, and pepper. Set aside.
Prepare a third bowl with the all-purpose flour, seasoning it with a pinch of salt and pepper.
Dredge each shrimp in the flour, shaking off the excess.
Dip the floured shrimp into the egg mixture, ensuring they are fully coated.
Finally, coat the shrimp with the coconut and Panko mixture, pressing gently to adhere.
Place the coated shrimp in a single layer in the air fryer basket, ensuring they are not touching.
Lightly spray the shrimp with cooking spray for extra crispiness.
Air fry the shrimp for about 8-10 minutes, flipping halfway through, until golden brown and crispy.
Once cooked, remove from the air fryer and serve immediately with a side of sweet chili sauce or mango salsa.
