4 large chicken legs (drumsticks and thighs)

2 cups buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 tablespoon paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon dried thyme

Vegetable oil for frying

In a large bowl, whisk together the buttermilk, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

    Add the chicken pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 4 hours, preferably overnight for maximum flavor and tenderness.

      In another bowl, combine the flour, baking powder, thyme, and a pinch of salt. Mix well to combine.

        Remove the marinated chicken from the fridge and shake off any excess buttermilk.

          Dredge each piece of chicken in the seasoned flour, pressing down gently to ensure a thick coating. Shake off any excess flour.

            In a large skillet or deep fryer, heat about 2 inches of vegetable oil to 350°F (175°C).

              Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.

                Fry the chicken for about 12-15 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

                  Once cooked, transfer the chicken to a wire rack or paper towels to drain excess oil.

                    Allow to rest for a few minutes before serving.
