Instructions
In a bowl, mix together lemon juice, minced garlic, thyme, oregano, salt, pepper, chicken broth, olive oil, and lemon zest.
Place the chicken breasts in the crockpot and pour the lemon garlic mixture evenly over the top.
Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken reaches an internal temperature of 165°F (75°C).
Once cooked, carefully remove the chicken from the crockpot. If desired, shred the chicken using two forks for easier serving.
To serve, drizzle some of the flavorful cooking liquid over the chicken and garnish with freshly chopped parsley.
Notes
Shredding the chicken makes it easier to serve.
