4 boneless, skinless chicken breasts

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 red bell pepper, diced

1 small red onion, chopped

2 cloves garlic, minced

1 tablespoon cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

1 teaspoon oregano

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Optional toppings: avocado slices, shredded cheese, sour cream

Instructions
 

Prep the Chicken: Place the chicken breasts at the bottom of the crockpot. Season with salt, pepper, cumin, chili powder, smoked paprika, and oregano, ensuring an even coating.

    Layer the Veggies: Add the chopped red onion, diced bell pepper, minced garlic, black beans, corn, and diced tomatoes (with their juices) over the chicken.
