2 cups all-purpose flour

2 cups granulated sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

1 cup vegetable oil

3 large eggs

1 teaspoon vanilla extract

1 ½ cups crushed pineapple, drained

1 large ripe banana, mashed

1 cup chopped pecans or walnuts (optional)

1 cup shredded coconut

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

2 tablespoons milk (as needed for consistency)

Instructions
 

Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans. Line the bottoms with parchment paper for easy removal.

    In a large mixing bowl, sift together the flour, sugar, baking soda, cinnamon, and salt. Mix until combined.

      In a separate bowl, whisk together the vegetable oil, eggs, and vanilla extract until well combined.

        Slowly add the wet ingredients to the dry ingredients, stirring until just blended.

          Fold in the crushed pineapple, mashed banana, chopped nuts (if using), and shredded coconut until evenly distributed.

            Divide the batter evenly among the prepared cake pans.

              Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

                Allow the cakes to cool in the pans for 10 minutes before turning them out onto wire racks to cool completely.

                  While the cakes are cooling, prepare the cream cheese frosting. In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.

                    Gradually add the powdered sugar and vanilla extract, mixing until the frosting is fluffy. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.

                      Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top.

                        Add the second layer of cake and frost the top, then place the final layer on top and frost the entire cake.

                          For an added touch, decorate the top with additional chopped nuts, coconut flakes, or edible flowers.
