Ingredients

1 pound pizza dough

1 cup mozzarella cheese, shredded

1/2 cup ricotta cheese

1/2 cup cooked spinach, drained and chopped

1/2 red bell pepper, thinly sliced

1/2 cup mushrooms, sliced

1 small zucchini, sliced

1 teaspoon dried oregano

1 teaspoon garlic powder

1 egg, beaten (for egg wash)

Olive oil, for drizzling

Salt and pepper to taste

Marinara sauce, for dipping

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Roll out the pizza dough on a lightly floured surface into a rectangle, about 12x14 inches in size.

In a medium bowl, combine the mozzarella cheese, ricotta cheese, cooked spinach, red bell pepper, mushrooms, and zucchini. Season with oregano, garlic powder, salt, and pepper. Mix until well combined.

Spread the cheese and veggie mixture evenly across the rolled-out dough, leaving about an inch border around the edges.

Starting from one of the long sides, carefully roll the dough tightly into a log, tucking in the edges as you go.

Transfer the rolled Stromboli to the prepared baking sheet, seam side down.

Brush the top of the Stromboli with the beaten egg and drizzle with olive oil for a golden finish.

Use a sharp knife to make a few diagonal slits on the top of the Stromboli for steam to escape.

Bake for 25-30 minutes, or until the Stromboli is golden brown and cooked through.

Remove from the oven and let it cool for a few minutes before slicing. Serve warm with marinara sauce for dipping.
