4 bone-in pork chops (1-inch thick)

2 large onions, thinly sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon sugar

1 cup beef broth (low sodium)

1 cup shredded Gruyère cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Pork Chops: Pat the pork chops dry with paper towels and season both sides generously with salt and pepper.

    Sear the Pork Chops: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the pork chops to the pan and sear for about 4-5 minutes on each side until they are golden brown. Remove them from the skillet and set aside.

      Cook the Onions: In the same skillet, add the thinly sliced onions and reduce the heat to medium. Stir in the sugar and dried thyme. Cook the onions, stirring occasionally, for about 15-20 minutes or until they are caramelized and golden brown.

        Add Garlic and Broth: Once the onions are caramelized, add the minced garlic and cook for another minute until fragrant. Pour in the beef broth to deglaze the pan, scraping up any browned bits from the bottom.

          Return Chops and Simmer: Place the seared pork chops back into the skillet, spooning some of the onion mixture over the top. Bring the mixture to a simmer, cover, and let cook for an additional 10-15 minutes, until the pork is cooked through and reaches an internal temperature of 145°F (63°C).

            Add Cheese: During the last 5 minutes of cooking, sprinkle the shredded Gruyère cheese over the pork chops, cover, and allow the cheese to melt.

              Serve: Once the cheese is melted and bubbly, remove from heat. Garnish with fresh chopped parsley before serving.
