Instructions
Preheat the oven to 425°F (220°C).
In a large mixing bowl, combine the diced sweet potatoes, minced garlic, olive oil, dried rosemary, dried thyme, smoked paprika, salt, and pepper.
Toss the ingredients together until the sweet potatoes are evenly coated with the oil and spices.
Spread the sweet potatoes out in a single layer on a baking sheet lined with parchment paper for easy clean-up.
Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are golden brown and tender when pierced with a fork.
Remove from the oven and let them cool slightly.
Transfer to a serving dish and sprinkle fresh chopped parsley over the top for an added burst of color and flavor.
