2 boneless, skinless chicken breasts

1 cup mushrooms, finely chopped (cremini or button)

1/2 cup fresh spinach, chopped

1/4 cup low-fat cream cheese

1/4 cup shredded mozzarella cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

      Add the chopped mushrooms and cook for about 5-7 minutes, or until they release their moisture and are browned.

        Stir in the chopped spinach and cook for another 2 minutes until wilted.

          Remove the skillet from heat and let the mixture cool slightly.

            In a bowl, combine the cooled mushroom-spinach mix with cream cheese, mozzarella cheese, dried thyme, salt, and pepper. Mix well.

              Slice a pocket into the side of each chicken breast, being careful not to cut all the way through.

                Stuff each chicken breast with the mushroom mixture, securing with toothpicks if necessary.

                  Season the outside of the chicken breasts with paprika, salt, and pepper.

                    Place the stuffed chicken breasts on a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                      Remove from the oven and let rest for 5 minutes before removing toothpicks.

                        Garnish with fresh parsley before serving.
