Instructions
Preheat your oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions until al dente. Drain and lay them out flat on a clean kitchen towel to cool.
In a mixing bowl, combine the ricotta cheese, 1 cup of mozzarella cheese, Parmesan cheese, egg, spinach, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are thoroughly incorporated.
Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish.
Take one cooked lasagna noodle and spread a generous amount of the cheese and spinach filling along its length. Roll the noodle tightly from one end to the other and place it seam side down in the baking dish.
Repeat the process until all the noodles are filled and rolled. Arrange them side by side in the baking dish.
Pour the remaining marinara sauce over the top of the roll ups, ensuring they are well coated.
Sprinkle the remaining mozzarella cheese on top.
Cover the baking dish with aluminum foil (avoid touching the cheese) and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
Let the lasagna roll ups cool for about 5-10 minutes before serving. Garnish with fresh basil leaves if desired.
