Instructions
In a large bowl, massage the chopped kale with a pinch of salt for about 3-5 minutes to soften the leaves and enhance the flavor.
In a small bowl, whisk together lemon juice, lemon zest, olive oil, honey, salt, and pepper until well combined.
Pour the dressing over the massaged kale and toss to coat evenly. Let it sit for about 10 minutes to absorb the flavors.
Gently fold in the cherry tomatoes, red onion, and grated Parmesan cheese into the kale salad.
In a dry skillet over medium heat, toast the pine nuts for 3-4 minutes until golden brown, shaking the pan frequently to prevent burning.
Top the salad with the toasted pine nuts just before serving for an added crunch.
Notes
Serve in a large, shallow bowl, and garnish with extra shavings of Parmesan and lemon zest.
