In a large mixing bowl, whisk together the maple syrup, Dijon mustard, soy sauce, minced garlic, thyme, salt, and pepper until well combined.
Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Cover and marinate in the fridge for at least 30 minutes (or up to 2 hours for deeper flavor).
Preheat your oven to 400°F (200°C).
In an oven-safe skillet, heat the olive oil over medium-high heat until shimmering.
Remove the chicken from the marinade, letting excess drip off, and place the chicken thighs in the skillet. Sear for 4-5 minutes on each side until golden brown.
Pour the remaining marinade over the chicken, then carefully transfer the skillet to the preheated oven.
Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
Once done, remove from the oven and cover with foil for about 5 minutes before serving to retain moisture.
