1cupsun-dried tomatoes (packed in oil, drained and chopped)
1cupfreshly grated Parmesan cheese
2cupsfresh spinach
for garnishfresh basil leaves
Instructions
Season both sides of the chicken breasts with garlic powder, onion powder, paprika, salt, and pepper.
In a large skillet, heat olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove from skillet and set aside.
In the same skillet, pour in the heavy cream and bring it to a simmer. Stir in the sun-dried tomatoes and Parmesan cheese, mixing until the cheese is melted and the sauce is smooth.
Once the sauce is ready, add the spinach to the skillet and stir until wilted and well incorporated into the sauce.
Return the chicken to the skillet, spooning some sauce over each piece. Let it simmer for about 3-4 minutes to meld the flavors together.
Remove from heat. Garnish with fresh basil leaves before serving.
