Instructions
In a large saucepan, heat sesame oil over medium heat. Add minced ginger and garlic, sautéing until fragrant (about 1 minute).
Add the sliced chicken breast to the pan, cooking until no longer pink (approximately 3-4 minutes). Season with a pinch of salt and pepper.
Pour in the chicken broth and soy sauce. Bring to a gentle boil.
Stir in the sliced mushrooms and let them cook for about 2-3 minutes until softened.
Add the instant ramen noodles to the pot, cooking according to package instructions (usually 3-4 minutes).
Once the noodles are cooked, add the baby spinach and stir until wilted, about 1-2 minutes.
If desired, top the ramen with a soft-boiled egg, halved, and garnish with sliced green onions and chili flakes.
Serve hot and enjoy your quick and zesty chicken ramen!
