Instructions
In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Heat olive oil in a non-stick skillet over medium heat. Pour the egg mixture into the skillet and scramble until just set, about 3-4 minutes. Remove from heat and let cool slightly.
Spread a layer of cooked breakfast sausage evenly over each tortilla, using about 1/4 cup for each.
Add a generous portion of the scrambled eggs on top of the sausage, followed by a handful of shredded cheese.
Carefully roll up each tortilla tightly, starting from one end and tucking in the sides as you go to prevent the filling from spilling out.
If desired, you can place the roll-ups seam side down on a lightly greased skillet over low heat to crisp the outside for 2-3 minutes, flipping halfway through.
Remove from the skillet, slice diagonally, and garnish with chopped chives or parsley.
Notes
Serve with salsa or fresh fruit salad for a vibrant breakfast.
