Instructions
In a mixing bowl, whisk together the flour, buttermilk, egg, baking powder, baking soda, and salt until smooth.
Stir in the shredded cheese, crumbled sausage, chopped bell peppers, and green onions until evenly combined.
Heat a non-stick skillet or griddle over medium heat and lightly grease with olive oil or butter.
Pour 1/4 cup of the pancake batter onto the skillet for each taco pancake. Flatten slightly with the back of a spatula.
Cook for about 2-3 minutes on one side, or until bubbles form on the surface and the edges appear set.
Flip the pancakes and cook for another 1-2 minutes until golden brown. Repeat until all batter is used.
To assemble, take a pancake and fold it in half like a taco. Repeat with remaining pancakes.
Serve warm with sour cream and salsa on the side for dipping.
