Prepare the Steak: Season the cubed sirloin steak generously with salt, pepper, and smoked paprika. Allow it to sit at room temperature for about 15 minutes to enhance flavor.
Heat the Pan: In a large skillet, melt 2 tablespoons of butter over medium-high heat until bubbling.
Sear the Steak: Add the steak bites to the skillet in a single layer. Sear for 2-3 minutes without moving them until they develop a golden-brown crust. Flip and sear for another 2 minutes for the perfect medium-rare (or cook longer to your preference).
Add Garlic and Herbs: Lower the heat to medium and push the steak bites to one side of the skillet. Add the remaining butter, minced garlic, rosemary, and thyme to the cleared space. Cook for 1 minute until fragrant, stirring to combine the garlic with the steak.
Toss and Coat: Drizzle the garlicky butter over the steak bites and toss gently to coat evenly.
Serve and Garnish: Remove from heat and transfer the steak bites to a serving platter. Drizzle any remaining garlic butter from the pan over the top and garnish with fresh parsley.
