Instructions
Season the beef cubes with salt and pepper. If desired, sear them in a large skillet over medium-high heat until browned on all sides.
In a slow cooker, add the diced potatoes, sliced carrots, chopped onion, and minced garlic. Stir to combine.
Place the seasoned beef cubes on top of the vegetable mixture in the slow cooker.
In a microwave-safe bowl, melt the butter. Once melted, stir in the beef broth, Worcestershire sauce, thyme, and rosemary. Mix well.
Pour the garlic butter mixture over the beef and vegetables in the slow cooker, ensuring everything is well coated.
Cover and cook on low for 6-8 hours or on high for 4-5 hours, until the beef is tender and the potatoes are cooked through.
Once cooked, taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
Notes
Searing the beef adds extra flavor but is optional.
