Instructions
Prepare the Baking Pan: Grease a 9x13 inch baking dish with butter or cooking spray to prevent sticking.
Melt Butter and Marshmallows: In a large saucepan over medium heat, melt the butter. Once melted, add the mini marshmallows and stir continuously until completely melted and smooth. Remove from heat.
Add Vanilla and Graham Cracker Crumbs: Stir in the vanilla extract and graham cracker crumbs until well combined. The mixture should be thick and sticky.
Combine with Rice Krispies: Gradually add the Rice Krispies cereal to the marshmallow mixture, stirring gently to coat all the cereal evenly. The mixture should be a little sticky but hold together well.
Mix in Chocolate Chips: Fold in the chocolate chips until evenly distributed throughout the mixture. You may reserve a few to sprinkle on top for added decoration.
Press into Baking Dish: Transfer the mixture into the prepared baking dish. Using a spatula or parchment paper, press the mixture down firmly to create an even layer.
Top with Extra Mini Marshmallows: Sprinkle additional mini marshmallows and reserved chocolate chips over the top, pressing them lightly into the mixture.
Cool and Cut: Allow the treats to cool at room temperature for about 30 minutes to set. Once cooled, cut into squares or rectangles for serving.
Serve and Enjoy: These treats are best enjoyed fresh, but they can be stored in an airtight container for up to a week.
