3 cups hash brown potatoes (fresh or frozen, thawed)

1/4 cup melted butter

1/2 teaspoon garlic powder

Salt and pepper to taste

6 large eggs

1 cup milk

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1 cup fresh spinach, chopped

1/2 cup cherry tomatoes, halved

1 tablespoon fresh basil, chopped

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Make the Hash Brown Crust: In a large bowl, combine the hash browns, melted butter, garlic powder, salt, and pepper. Mix until well combined.

      Form the Crust: Press the hash brown mixture firmly into the bottom and up the sides of a greased 9-inch pie pan to form a crust. Bake in the preheated oven for 20 minutes, or until golden brown and crispy.

        Prepare the Filling: While the crust is baking, whisk together the eggs, milk, and a pinch of salt and pepper in a large bowl until smooth.
