Instructions
In a large bowl, combine the ground beef (or turkey), breadcrumbs, chopped onion, Parmesan cheese, egg, minced garlic, salt, and pepper. Mix well until all ingredients are thoroughly combined.
Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.
Preheat your oven to 400°F (200°C). Bake the meatballs for 20 minutes, or until they are browned and cooked through.
While the meatballs are baking, in a saucepan over medium heat, combine the soy sauce, brown sugar, ketchup, apple cider vinegar, and cornstarch. Stir well to combine, and bring to a simmer. Cook for 5-7 minutes until the sauce thickens slightly.
Once the meatballs are cooked, remove them from the oven and carefully transfer them to the saucepan with the sweet and sour sauce. Add in the pineapple chunks and chopped bell peppers. Stir gently to coat the meatballs in the sauce.
Allow the mixture to simmer for an additional 5 minutes on low heat, allowing the flavors to meld together.
Remove from heat and drizzle with sesame oil for extra flavor. Serve the meatballs on a bed of rice or alongside steamed vegetables.
