In a mixing bowl, combine warm water, 2 tablespoons of sugar, and active dry yeast. Let it sit for about 5 minutes or until frothy.
In a large bowl, mix flour and salt. Create a well in the center and pour in the yeast mixture. Mix until it forms a dough.
Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.
Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place until it doubles in size (about 1 hour).
Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large pot, bring 10 cups of water and the baking soda to a boil.
Once the dough has risen, punch it down and divide it into small pieces (about 1.5 inches in size). Roll each piece into a rope and shape it into a pretzel knot or bite.
Carefully place several pretzel bites into the boiling solution for about 30 seconds. Remove with a slotted spoon and place them on the prepared baking sheet.
Brush each pretzel bite with the beaten egg for a shiny finish.
Bake in the preheated oven for 12-15 minutes or until golden brown.
While baking, mix the granulated sugar and ground cinnamon in a bowl.
Once baked, remove the pretzel bites from the oven and immediately coat them in the cinnamon sugar mixture by rolling them until fully covered.
