Ingredients

1 pound baby carrots (or regular carrots, peeled and cut into sticks)

3 tablespoons olive oil

4 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon honey (or maple syrup for vegan option)

1 teaspoon dried thyme (or fresh if available)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat your oven to 425°F (220°C).

In a large bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, honey, dried thyme, salt, and pepper. Whisk together until well combined.

Add the baby carrots to the bowl and toss them in the lemon garlic mixture until they are evenly coated.

Spread the carrots in a single layer on a baking sheet lined with parchment paper for easy cleanup.

Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through to ensure even roasting.

Once done, remove the carrots from the oven and let them cool for a minute.

Taste and adjust seasoning if necessary, then transfer the carrots to a serving dish.

Garnish with freshly chopped parsley before serving.
