Line a 9x9 inch baking pan with parchment paper, ensuring to leave some overhang for easy removal later.
In a microwave-safe bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the mixture is completely melted and smooth (about 1-1.5 minutes total).
If desired, stir in the peppermint extract for an extra hint of flavor.
Pour the melted white chocolate into the prepared baking pan and spread it evenly with a spatula.
While the chocolate is still warm, sprinkle the crushed peppermint candies generously over the top. You can also lightly press them down to ensure they stick.
Finish with a pinch of sea salt for a sweet-and-salty flavor contrast.
Refrigerate the bark for at least 1-2 hours or until fully set.
Once set, use the parchment paper overhang to lift the bark out of the pan. Break it into pieces of desired size.
Notes
Arrange the bark pieces on a festive platter and sprinkle with a few whole peppermint candies for decoration. Wrap in clear cellophane and tie with a holiday ribbon for a perfect edible gift!
